Sorry, not too much to post about today. Worked most of the day and have to get up early tomorrow. But, I had enough time before bed to wash and cut potatoes for my fam. I thought it would be fun to give you some potato facts and a delicious mashed potato recipe!

- During the Alaskan Klondike gold rush, (1897-1898) potatoes were practically worth their weight in gold. Potatoes were so valued for their vitamin C content that miners traded gold for potatoes.

- Marie Antoinette, wife of Louis XV, was known to wear potato blossoms as a hair decoration.

- The Incas had many uses for potatoes other than dinner:

  • Raw slices placed on broken bones to promote healing.
  • Carried to prevent rheumatism.
  • Eaten with other foods to prevent indigestion.
  • Measured time: by correlating units of time by how long it took for potatoes to cook.

Now for this delicious potato recipe! This is taken from the Martha Stewart website

  • 3 1/2 pounds white or Yukon Gold potatoes
  • Coarse salt and freshly ground pepper
  • 8 ounces cream cheese, softened
  • 4 ounces (1 stick) unsalted butter, softened
  • 1/4 cup whole milk, warmed
  • 1/2 cup heavy cream, warmed

Directions

  1. Place potatoes and 1 tablespoon salt in a medium pot, cover with cold water by 2 inches, and bring to a boil. Reduce heat, cover partially, and simmer until potatoes are tender, about 35 minutes. Drain, and let stand until just cool enough to handle. Rub off skins, and discard. Cut potatoes into large pieces.
  2. Combine potatoes, cream cheese, butter, milk, and 1/4 cup cream in a mixer bowl fitted with the paddle attachment. Beat until combined. Season with salt and pepper, and beat to desired consistency.
  3. Return mashed potatoes to pot, and place over medium heat. Add remaining cream, and cook, stirring constantly, until heated through. Serve immediately, or keep warm in a covered bowl over simmering water for up to 2 hours.

Make sure to have warm cream and milk, otherwise your potatoes will be gummy and gross. Thank you everyone, I promise something exciting for dinner tomorrow night… I have to use up some broccoli and avocados.
