Thank you everyone for coping with me yesterday. I had a bit of a mild temper tantrum and after sleeping on it, I feel much better. Thank you to all of you that listened to me. I know a nice long photography session should get me out of my funk. And until then, I’ve stumbled upon something amazing.

Nick Frost, the English writer/actor, wrote on his Twitter page that he was making a “Mushroom Pie”. When I saw a picture/read about what exactly this was… I thought I would try and make something similar. Of course, I didn’t put a lid or bake this. Therefore I am calling more of a stew. It was so brilliant. It has got to be one of the best things I have made up to this point.

I just, have to give you the recipe. I am very impressed. I am going to call it Mushroom Chowder.

You will need:

butter, olive oil
a few cloves of garlic
one large onion, diced
one shallot, diced
4 carrots, peeled and chopped
4 potatoes, peeled and chopped
sliced mushrooms (I used about 12 white mushrooms)
a little bit of sage and basil
vegetable broth
salt and pepper
whipping cream and flour (a rue)

I know this seems like a lot of ingredients, but it’s soo easy. Before anything, take the potatoes and boil them al dente. This makes it much easier for later on. So yes, do that and take a large dutch oven, add the oil and butter and melt over med-high heat. Add all of the veggies and cook down. Don’t worry if the onions stick to the bottom because you will now deglaze the pan with some vegetable stock. Add a few shakes of dried basil and sage at this point. Make sure there is enough liquid to cover the veggies. Add the potatoes and cover until it boils. Make sure the carrots and everything is cooked before adding your rue. After everything has combined and thickened up, you are good to go. Season appropriately, and enjoy!
